Zucchini Ribbon Salad with White Cod – Seasonal, High-Protein Meal Prep in Raleigh

We have been absolutely loving all the different types of zucchini, squash and gourds that NC has been throwing down this season. We have seared them, roasted and poached them but perhaps we have found the best way to prepare them. Slice them super thin and cure them with salt & extra virgin olive oil - it keeps their crunch and elevates their sweet flavor! Add some delightful butter basted white cold, clouds of whipped ricotta, chickpea & almond vinaigrette and some blood orange - you have a perfectly light, balanced but protein dense salad
