Coronation Chicken Wraps

A dish created to celebrate the coronation of Queen Elizabeth II, Coronation Chicken is a true british staple. Heavily influenced from British commonwealth ties with India and the Caribbean - Chicken is poached and then infused with curry spices. We then mix it with creamy high protein yoghurt and mango chutney to give it a warm and sweet flavor. Finally pairing with honeycrisp apples and charred zuchini to make these wraps unforgettably good

Velvet Pancetta Polenta

Criminally slept upon, we are here to give Polenta the spotlight it deserves! It's filling but not dense, creamy yet not rich - some would say the perfect partner to a crisp cured pancetta. We pair this with the best of the season's vegetables, sometimes zucchini, squash, carrot or blistered tomato. Glazing it in our own hot honey to finish it all together for a light but filling dish. Sauteed chicken or pork tenderloin are great proteins to accompany.

Asian Chickpea & Rutabaga Curry w Champagne Pickled Shallots

Influenced by Southeastern Asian spices and Northern Indian Chana Masala - this fusion will silence anyone who believes vegetables can't supply the same level of comfort than meat centred dishes. We use local sweet potatoes and rutabaga (a cousin of turnip) to provide a sweet balance to the rich coconut broth. Finished with flaked almonds and quick pickled shallots - this is a complete dish for dark nights.

Twice Baked Eggplant Parmigiana

In the foothills of Furore, a small town nestled between hard coastline of the Amalfi Coast, Chef Vito taught me how to make magic with eggplants. Lightly baked and bathed in an Amalfi style marinara, topped with a cool ricotta pesto emulsion. Finished with a parmesan and oregano crumb - pair it with an Aperol Spritz and your essentially Italian!

Poached NC shrimp, Cheddar Grits & Sweet Romesco Liqor

Like Michael Jordan - Shrimp & Grits is a true American classic to hail from the shores of North Carolina (Don't tell anyone from South Carolina we said that!). Naturally low in fat and high in protein, shrimp are a nutritionists dream. To keep our beautiful local NC shrimp perfectly tender, we slowly poach them in a sweet pepper romesco sauce, finishing on top of stone ground cheddar grits. Who said delicious and nutritous can't exist?

Moroccan Lamb Tagine w Apricot & Pistachio

A middle eastern explosion of tender lamb, sweet fruit and rich flavors. We tenderise lamb shoulder in honey and middle eastern spices, keeping it soft and juicy and full of bold flavor. Topped with a delicious syrup of dried apricots, golden berries and poached pistachio, this dish will weaken anyone's belief that fruit and meat shouldn't mix! Choose to add some carbs to this like grilled flatbreads or lime fluffed rice. Not traditional, but our champagne pickled shallots add a lovely acidity to this dish.

A dish inspired from their notorious house dhal - this dish encapsulates the subtle heat of a traditional dhal, with the creamy natural sugars of sweet potato. Fried sage and pickled red onion round this fall dish off.

GF Lemon Pistachio Loaf

This wasn't meant to be on the menu. It was made for a friend who flew in for the weekend but it turned out so unbelievably good it would be a tragedy to gatekeep such a treat. You won't believe this is Gluten Free. The sponge is kept light and airy through using olive oil and yoghurt, with fresh notes of lemon throughout. Topped with a delightful lemon glaze and crunchy pistachio, this is reminiscent of our favourite bakery in London - GAILS.
