Sesame Soba Noodles w Crunchy Spring Salsa

Another recipe influenced from working on a farm in NY, these noodles were only thing the farmers ordered for lunch between May and August. Working hard in the heat, they needed nutrition they could turn into energy quickly. These sesame toasted soba noodles are filling, delicious and packed full of vibrant spring flavors. Finished with a tamari soaked jammy egg, a perfect lunch or dinner time dish for our hot summers is here!
