We have been absolutely loving all the different types of zucchini, squash and gourds that NC has been throwing down this season. We have seared them, roasted and poached them but perhaps we have found the best way to prepare them. Slice them super thin and cure them with salt & extra virgin olive oil - it keeps their crunch and elevates their sweet flavor! Add some delightful butter basted white cold, clouds of whipped ricotta, chickpea & almond vinaigrette and some blood orange - you have a perfectly light, balanced but protein dense salad

Chicken Caesar Greens



Lemon, thyme & coriander marinated chicken breast is the star of the show in this incredible caesar salad. We sit in on top of romaine lettuce, with sliced red onion and a crumbly parmesan crisp. Not forgetting the best pickle caesar dressing you've ever tasted! A summer must for sure.

The dish we've been waiting to add to our menu for the longest time! It's peach season and unlike Justin Bieber - we get our peaches out in NC. Finished with candied macademia's and a beauty maple dijon vinaigrette - the showstopper is finally here!

Sticky Miiso Pork Udon with Burnt Scallion Aioli




Taking a trip from east Asia with a touch of Spanish flair, this dish arrives onto the menu in some style. Our crispy pork bathes in a sublime miso marinade providing a rich umami taste in each bite. Providing a beautiiful texture balance are quick pickled carrot ribbons and radish. Finished with the star of the dish - burnt scallion aioli with roasted garlic. A real treat!

Seared Pork Chop with Corn Cream & Salsa




I'm going to need you to leave what you thought you knew about pork behind for this one. This is delicate, decadent and so soft you'd think your eating wagyu. A simple emulsion of local corn, fresh ginger and seasoned milk is the perfect companion. Finished with a Crewneck speciality - charred corn salsa with fresh honeycrisp and basil.

Hot Halloumi Buddha Bowl




This is the kind of dish we love here at Crewneck Chef. Something that tastes light but is nutrient dense. Something that screams simplicity, seasonality and all round deliciousness. We slowly saute the chard with shallot and garlic, removing the biterness wrongfully assosciated with this delicious vegetable. Sat alongside hot honey glazed halloumi, crispy chickpeas, a hearty grain like Farro or Buckwheat, and a soft and velvety whipped tahini - this dish is a protein packed and nutrient dense powerhouse.

Sesame Soba Noodles w Crunchy Spring Salsa




Another recipe influenced from working on a farm in NY, these noodles were only thing the farmers ordered for lunch between May and August. Working hard in the heat, they needed nutrition they could turn into energy quickly. These sesame toasted soba noodles are filling, delicious and packed full of vibrant spring flavors. Finished with a tamari soaked jammy egg, a perfect lunch or dinner time dish for our hot summers is here!

Like Michael Jordan - Shrimp & Grits is a true American classic to hail from the shores of North Carolina (Don't tell anyone from South Carolina we said that!). Naturally low in fat and high in protein, shrimp are a nutritionists dream. To keep our beautiful local NC shrimp perfectly tender, we slowly poach them in a sweet pepper romesco sauce, finishing on top of stone ground cheddar grits. A dish inspired from their notorious house dhal - this dish encapsulates the subtle heat of a traditional dhal, with the creamy natural sugars of sweet potato. Fried sage and pickled red onion round this fall dish off.

N'duja want Tofu & Orzo?




Tofu is an example of a food that for too long has been on the end of negative PR. We're here to turn that around for our protein-dense partner. The thing with tofu is, it's really quite bland unless you give it a makeover. That's why we have taken it to the Adriatic coast - letting it marinate in an n'duja style paste before serving it over a creamy tuscan style orzo with sundried tomato and fresh market tomatoes for that zip in every mouthful. This dish brings southern Europe to your table!

A dish created to celebrate the coronation of Queen Elizabeth II, Coronation Chicken is a true british staple. Asian Chickpea & Rutabaga Curry w Champagne Pickled Shallots




Influenced by Southeastern Asian spices and Northern Indian Chana Masala - this fusion will silence anyone who believes vegetables can't supply the same level of comfort than meat centred dishes. We use local sweet potatoes and rutabaga (a cousin of turnip) to provide a sweet balance to the rich coconut broth. Finished with flaked almonds and quick pickled shallots - this is a complete dish for dark nights.

Twice Baked Eggplant Parmigiana



In the foothills of Furore, a small town nestled between hard coastline of the Amalfi Coast, Chef Vito taught me how to make magic with eggplants. Lightly baked and bathed in an Amalfi style marinara, topped with a cool ricotta pesto emulsion. Finished with a parmesan and oregano crumb - pair it with an Aperol Spritz and your essentially Italian!

This wasn't meant to be on the menu. It was made for a friend who flew in for the weekend but it turned out so unbelievably good it would be a tragedy to gatekeep such a treat. Topped with a delightful lemon glaze and crunchy pistachio, this is reminiscent of our favourite bakery in London - GAILS.
